Aynısefa (Marigold) calendula officinalis
The name Calendula is derived from Latin, meaning "the first day of the month," because the plant blooms again after the seeds of the flowers are properly picked. It is also known as Pot Marigold due to its orange-colored flowers. However, it is not related to the Narcissus plant. It belongs to the daisy family.
Marigold, which has made its way into many world cuisines, is used in foods as a flavoring and coloring agent. Despite not having the taste of saffron, it is indispensable for certain breads and cakes because it imparts a saffron color. With its unique pleasant scent and non-intrusive aroma, it can be used as a decorative ingredient in almost any type of salad.
The use of marigold dates back to the 12th century. It was also known as a rain indicator. If the flowers remain closed after 7 o'clock in the morning, it was said to mean that it would rain that day.
